The Sarajevo Brewery (Sarajevska Pivara) is an industrial and cultural landmark located in the Bistrik neighborhood of Sarajevo. It functions as an active brewery, a historical museum, and a restaurant complex.

The brewery is a prominent example of industrial Neo-Renaissance architecture, characterized by its deep red brick facade and decorative white stone trim. The complex features arched windows, a large central chimney, and ornamental battlements. The interior of the associated Brewery HS restaurant maintains a classic Central European beer hall aesthetic with dark wood carvings and high ceilings.
Location & Access Logistics
The site is located at Franjevačka 15, approximately 400 meters South of the Latin Bridge. It is accessible via the trolleybus lines 101 and 103 (stop Trg Austrije), followed by a 200-meter walk uphill. Pedestrians can reach the site from Baščaršija in approximately 10 minutes. Limited street parking is available, but the complex is best accessed on foot or by taxi due to narrow surrounding streets.
Historical & Ecological Origin
Founded in 1864 by industrialist Josef Feldbauer, it is the first modern industrial plant in Bosnia and Herzegovina. During the Austro-Hungarian period, it was expanded to its current architectural form. The brewery was strategically built over a natural spring that provides exceptionally pure water from the Trebević mountain, which continues to be the primary water source for its production.

Visitors can tour the Sarajevo Brewery Museum, which displays historical documents, antique brewing equipment, and vintage bottling lines. The Brewery HS serves unfiltered Sarajevo beer directly from the plant alongside traditional Bosnian and international cuisine. Best Time to Visit
The museum is open Monday through Saturday from 11:00 to 17:30. The restaurant is most active during the evening hours (19:00–22:00) when live music is frequently scheduled. For photography, the late afternoon provides optimal natural light on the red brick facade. The site is a popular shelter from the city's winter fog due to its indoor nature.
Facts & Legends
During the Siege of Sarajevo (1992–1995), the brewery’s natural spring became the city’s most critical water source after the main water supply was cut. Residents queued daily under sniper fire to collect water from the brewery's taps. It is the only brewery in the Ottoman Empire that was granted a special decree to produce beer despite the prevailing prohibition.
